Vegetable Kare Kare

Kare kare is usually made with tripe and other organ meats. This version uses only vegetables. It goes very well with rice. Rmember to serve with bagoong (fish paste)!

Ingredients:

1 pc Eggplant (sliced)
100 g String beans (chopped 1”)
4 pc Okra
1 bunch Pechay baguio
1 pc Onion (sliced)
1 pc Garlic (sliced)
1 pouch Kare Kare mix
Salt and pepper
2 tbsp Cooking oil
3 cups Water

Procedure:

In a pan saute the onion and garlic in some cooking oil.
Add the string beans, eggplant and okra.
Add the kare kare mix, salt, pepper and add water
Simmer until the vegetables are almost done to your liking.
Add the pechay and simmer for another minute.
Serve and enjoy!
