Puso de Cebu / Hanging Rice

Hanging Rice?  Yes, it’s a classic way of serving rice in certain parts of the Philippines. Richelle herself shows us how to make the rice “baskets” the rice is cooked in.  She does it a bit fast but maybe later we’ll ask her to make a video showing how to do it step by step.

In this series of recipes, Richelle goes on vacation to Dumanjug, Cebu, her hometown.  Naturally, we asked her to bring a video cam and capture some of the goodies they cook and serve there.

Ingredients:

  • Rice
  • Coconut leaves to wrap the rice in

Procedure:

  1. Make the rice “baskets” from the coconut leaves.
  2. Fill the baskets halfway with rice.
  3. Place the rice baskets in a pot of boiling water until the rice is cooked.
  4. Serve.  Use a knife to split open the rice baskets.
