Pork Pochero

Pochero is a tomato sauce based stew.  It can be done with wither beef or pork.  This particular recipe uses pork as the main meat component.  It also uses a variety of vegetables and bananas, which make it a source of fiber and veggie goodness.

  • 1 kilo      Pork, sliced into cubes
  • 1 pc         Red Onion, sliced
  • 3 pcs       Tomato, sliced
  • 3 pcs       Banana (Saba), sliced
  • 100 g      Pechay Baguio / Chinese Cabbage
  • 100 g      Baguio Beans
  • 1 pc         Large Potato, sliced
  • 100 g      Tomato sauce
  • 1 tbsp     Salt
  • 1 tbsp     Black Pepper
  • 1 tbsp     Fish sauce (optional)
  • 500 ml   Rice water ( Hugas Bigas)
  • 500 ml   Water

This serves: 6 to 8 people


1. Combine pork, onion, tomato and black pepper with rice water (hugas bigas). Bring to a boil for 20-30 minutes until the meat is tender.
2. Add the the potato and sliced banana. Add half of the water.   Simmer for 10 minutes.
3. Add the tomato sauce, salt and baguio beans. Add more water if necessary.  Simmer for 5 minutes.
4. Then add the pechay.  Cover and simmer for 1 minute.
5. Serve
