Paksiw na Bangus

Paksiw is a method of cooking food with vinegar. This gives the dish a sour flavor, a common theme in Filipino dishes. This dish is best served with rice.

Ingredients:

1 pc Bangus (Milkfish) cut into 1 inch thick slices
1 pc Eggplant cut into quarter inch slices
1 tbsp Cooking oil
1/3 cup Vinegar
2 pcs Siling Haba / Green Chili pepper
2 cups Water
Salt and pepper

Procedure:

In a pan over medium heat place the water, bangus, vinegar 1 tsp salt and 1 tsp pepper.
Cover and simmer for 10 minutes.
Add the eggplant and cooking oil.
Cover and simmer for 5 minutes.
Add the siling haba.
Cover and simmer for 3 minutes.
You can add more vinegar if you want it more sour.
Serve and enjoy!
