Lumpiang Itlog (Egg Springrolls)

Another yummy version of lumpia. This time we use eggs as the main ingredient for the filling.

Ingredients:

2 pcs Eggs (hard boiled and chopped)
1 pc Carrot (sliced into strips)
100 g Singkamas (Jicama) (sliced into matchstick size strips)
1 pc Onion (finely chopped)
3 cloves Garlic (minced)
10 pcs Lumpia wrapper
Salt and pepper to tase
Cooking oil
1/4 cup Vinegar

Procedure:

Mix all the hardboiled egg, carrots, singkamas, onion, garlic, salt and pepper.
Place a small amount over a lumpia wrapper and wrap into spring rolls.
In a hot pan add cooking oil and fry the lumpia until golden brown.
Serve with vinegar as a dip.
