Roasted over coconut husks and shells, this is the grand daddy of lechon manok.

In this series of recipes, Richelle goes on vacation to Dumanjug, Cebu, her hometown.  Naturally, we asked her to bring a video cam and capture some of the goodies they cook and serve there.

Ingredients:

1 whole dressed Native Chicken (Bisayang Manok)
3 – 5 stalks Lemon grass
1 pc Onion, roughly chopped
10 grams Spring onion, chopped
1/2 cup Salt
1/2 cup Soy sauce
1/2 cup Cooking oil

Procedure:

  1. Chop onion and mix with salt put inside the chicken with lemon grass and spring onion.
  2. Spread soy sauce all over the dressed native chicken for flavor.
  3. Grill and baste with cooking oil and the remaining soy sauce to prevent it from drying out.
  4. Best served with hanging rice.
  5. Serve and Enjoy!
