Fried Pork Liempo with Crispy Skin (Rated: **nyeta ang sarap!)

Because of the previous article “Yes, fried pork liempo can help you start losing weight” we have decided to share one of our favorite fried dishes.  Easy to make, super tasty and if you serve it with veggies, you can tell people it’s helping you learn to eat the veggies. :)   Don’t you just hate it when you bite into rubbery pork skin?  Here we’ll show you a technique to make the skin crispy.

  • Several slices of pork liempo
  • 1 cucumber sliced into cubes
  • 1 tomato sliced thinly
  • 1 packet of lettuce sliced into bit sized pieces
  • 1 lemon
  • 1 Apple sliced thinly and sprinkled with the lemon juice to prevent discoloration
  • Cooking oil
  • Margarine
  • Salt
  • 2 bamboo skewers



Salt the pork liempo.

Fry the pork liempo in margarine and oil.  You should cover the pan to help the pork keep it’s juices while cooking.


After frying you will then end up with the meat cooked, but the skin still in a rubbery state.  We now need to fry the skin one more time in order to get it crispy.  To do this, we stack the pork liempo together and use the bamboo skewers to hold them together.








Now We fry it again skin side down on the frying pan.


Is this crispy or what?


When you bite into that skin and you feel and hear it crunch … wahoo!


Serve the fried pork over layers of the lettuce, tomatoes, cucumbers and apples.

The apples go well with the pork and give a sweet contrast to the saltiness.

Serve and ENJOY!  Isn’t this a great way to enjoy vegetables?  No rice necessary.
