Eggplant Salad With Pepper Fish Sauce Dressing

Ingredients:

  • 1 pc eggplant
  • 1 pc carrot
  • ½ pc cucumber
  • 2 pcs tomato
  • 1 piece unripe mango
  • 1 pc onion
  • 1 pc hardboiled egg
  • 1 tsp black pepper
  • 1 tbsp lemon juice
  • 3 tbsp fish sauce (patis)

Procedure:

To make the dressing:

In a small container, mix the fish sauce, black pepper, lemon juice and 1 tbsp onion.

To make the Salad:

  1. Grill the eggplant in a pan over medium heat.
  2. Cut the mango, onion and cucumber into small cubes.
  3. Cut the tomatos and carrot into thin strips.
  4. After grilling the eggplant, peel off the skin.
  5. Place the eggplant and sliced vegetables and fruit on a serving plate.
  6. Slice the hard boiled egg and place over the other ingredients.
  7. You can drizzle the dressing over the salad or serve it on the side in a small container.
  8. Enjoy
