Eggplant Omelette

Another way of making an eggplant and egg combo.  In this recipe, we use the eggplant in thin slices, and not the usual tortang talong style.

Ingredients:

3 pcs Eggs
1 pc Eggplant sliced into thin pieces
200 grams Ground pork
1 pc Onion (chopped)
2 cloves Garlic (minced)
1/4 tsp Salt
1/4 tsp Black pepper
Cooking oil

Procedure:

In a hot pan add some oil then saute the onion, garlic, and pork.
Once cooked, place in a bowl and set aside for the moment.
In another bowl beat the eggs then add the eggplant slices, salt and pepper.
Add the sauted pork mixture and mix well.
In a pan, heat some cooking oil and add the mixed ingredients.
Fry both sides of the omelette for one to two minutes a side until the micture is cooked.
Serve with mayo and ketchup.
