Crispy Egg and Kangkong

Crispy egg and kangkong make a great appetizer for parties.  Also great as pulutan or barchow.  This is great served with beer!

Ingredients:

2 Eggs (hard boiled)
1 cup Kangkong leaves
1 pc Onion (chopped)
2 cloves Garlic (minced)
1/2 cup Flour
2 tbsp Cornstarch (add water to form slurry)
1/2 cup Breadcrumbs
2 tbsp Chives (chopped)
Salt and Pepper to taste
1/2 cup of water

Procedure:

In a bowl mix flour, onion, garlic, salt, pepper, water and the cornstarch to make a batter
In a pan pre heat cooking oil.
Dip kang kong in the batter and fry in the hot oil until golden brown.
After frying place on a plate covered with paper towels to drain excess oil.
Sliced the hardboiled egg, dip into the batter then dip in the breadcrumbs and fry until golden brown
Serve with sweet chili sauce.
